Characteristics
Description
The grapes, harvested in mid-September, ferment at a controlled temperature (22–24 °C) with a six-to-eight-day maceration on the skins, designed to extract colour and structure while preserving freshness. Ageing takes place entirely in steel.
The colour is a bright ruby red. The nose reveals notes of ink and flint, together with plum, blackcurrant and thyme.
